How to Make Easy Plant-Based "Eggs" at Home

INGREDIENTS

1 yellow onion

3 garlic cloves

Avocado oil

Tofu

Powdered turmeric

Basil

Yukon gold potatoes

Coconut oil

Salt and pepper to taste


DIRECTIONS

Scrambled “Eggs” 

1: Chop up three-quarters of yellow onion and dice three garlic cloves

2: In a pan, add one tablespoon of avocado oil and turn the heat on low 

3: Add onions and garlic to the cooking pan, cooking until lightly browned

4: Crumble tofu into the pan by hand. 

5: Add a tablespoon of turmeric, and basil, salt, and pepper to taste

6: Let cook for 3-5 minutes, stirring occasionally 

7: Transfer to a plate


Home fries:


1: Wash and dice potatoes

2: Turn heat on to low and add a tablespoon of coconut oil to a cooking pan 

3: Add diced potatoes and cook until lightly browned and crispy on the edges

4: Season with salt and pepper to taste

5: Turn off the heat and transfer to a plate


Once scrambled “eggs” and home fries are done, serve with toast, fresh fruit of your choosing, and your favorite tea or coffee.
